Monday Whiskey

Monday Whiskey is a non-alcoholic take on classic American whiskey, handcrafted in small batches in Southern California and matured with new white oak to build depth and wood character. The profile leans rich and warming, with notes of butterscotch, toasted brown sugar and raisin, followed by roasted coffee, caramel and molasses, a touch of orange, and a lingering spicy finish.

That warmth comes in part from capsaicin, and it’s an important part of understanding how to use Monday Whiskey. The heat can be pronounced when tasted straight, and this isn’t necessarily a 1:1 replacement for traditional whiskey. Think of it as a cocktail ingredient you may need to play with a little. Once you find the right proportion, the oak, caramel and spice settle beautifully into a drink and give it the structure and warmth that can be difficult to achieve with a non-alcoholic spirit.

Why We Love It

Non-alcoholic whiskey is a particularly tricky category because so much of traditional whiskey’s body and warmth comes from alcohol. Monday uses oak, darker caramelized flavors and capsaicin to recreate some of that warmth and structure. The capsaicin can be assertive, so you may need to adjust the proportions depending on the cocktail, but once you find the right balance, it works beautifully and brings real depth to the glass.

Monday Whiskey shines in cocktails where its oak, caramel and spice can settle into other flavors. Try it in an Old Fashioned, Whiskey Sour, Manhattan-style cocktail, or with ginger ale, ginger beer or cola. Because the capsaicin brings noticeable heat, start with a little less Monday than you might normally use for whiskey, taste, and adjust from there.

For an easy Old Fashioned, combine Monday Whiskey with a touch of maple syrup and 2–3 dashes of All The Bitter Aromatic Bitters over a large cube. Stir, taste, and adjust the whiskey until the balance of sweetness, oak and heat is right for you. Finish with an orange peel.
