Why We Love It
Oddbird takes the long route, and we think it shows. The Syrah is fermented in stainless steel to preserve freshness, then the wine spends 12 months on fine lees before the alcohol is gently removed at low temperature. That time on the lees gives the wine a rounder texture beneath all that fresh fruit and acidity. We especially like that Oddbird lets rosé be rosé without turning it into pink candy. It's dry, elegant and quietly interesting, with the fruit, acidity and little flicker of spice all pulling their weight.
Rosé has dinner plans: tuna crudo with citrus, grilled prawns with herbs, salmon with fennel, prosciutto and melon, roast chicken with rosemary, Margherita pizza, watermelon and feta with mint, or a generous wedge of Manchego with Marcona almonds.
