Bolle Sparkling Blanc de Blanc
BOLLE Blanc de Blancs is a non-alcoholic sparkling wine made from Chardonnay and Silvaner, with fine bubbles, bright citrus and plenty of fresh orchard fruit. Green apple and pear meet lemon and subtle floral notes, with lively acidity bringing freshness and a gentle creaminess giving the palate a little more weight. Crisp, polished and nicely dry, this is an easy bottle to open for an aperitif but has enough structure to carry on through dinner.
Why We Love It
BOLLE has figured out that removing alcohol is only half the equation. After dealcoholization, the wine undergoes a second fermentation using BOLLE's patent-pending process, designed to restore some of the aroma, texture and complexity that can disappear along with the alcohol. You can feel the difference here. There's real texture beneath the bubbles, good acidity and none of the sugary shortcut that shows up in too many non-alcoholic sparklers. This is one we're very happy to pour for someone who tells us they want their bubbles dry.
Bring on the salty things: oysters with lemon, Dungeness crab, smoked salmon, crispy calamari, fish and chips, potato chips with crème fraîche and caviar, a good wedge of Parmesan, or buttery popcorn when dinner isn't happening.
