Bolle Grand Reserve Blanc de Blanc
BOLLE Grand Reserve Blanc de Blancs is a non-alcoholic sparkling wine made from 90% Chardonnay and 10% Silvaner using BOLLE's patent-pending twice-fermented process. After the original wine is dealcoholized, a second fermentation rebuilds body, aroma, and texture before the wine spends nine months aging on its lees. That extra time brings notes of brioche and toasted nuts to ripe apricot, green apple, and citrus, with fine bubbles, vibrant acidity, and a creamy, lingering finish. Medium-dry and beautifully structured, this is BOLLE's most ambitious bottle and it tastes like it.
Why We Love It
This is BOLLE showing off a little, and frankly, it has earned the right. Nine months on the lees gives Grand Reserve the creamy texture and subtle brioche character we want from serious sparkling wine, while the bright acidity keeps everything fresh and precise. It has richness without becoming heavy and feels genuinely special from the moment the cork comes out. This is the bottle for the wedding toast, the anniversary dinner, or any night when the good glasses are coming out.
Especially good with: oysters Rockefeller, Dungeness crab, smoked salmon blinis with crème fraîche and capers, seared scallops with brown butter, lobster Thermidor, truffle risotto with wild mushrooms, roasted quail with apricot glaze, aged Comté with honeyed walnuts, triple-cream cheese, or a very good pile of salty fries.

Frequently Asked Questions
Is BOLLE Grand Reserve truly non-alcoholic?
Yes. As a dealcoholized wine it contains less than 0.5% ABV, which is the standard for non-alcoholic wines.
What makes this different from other non-alcoholic sparkling wines?
Most non-alcoholic sparkling wines are dealcoholized and bottled. BOLLE takes an additional step: a second fermentation after dealcoholization rebuilds body, aroma, and texture, followed by nine months of lees aging. The result has a creaminess and complexity that most non-alcoholic sparkling wines don't come close to.
What does lees aging mean?
Lees are the spent yeast cells left after fermentation. Aging on the lees adds brioche, toasted-nut, and creamy notes to the wine and builds a finer, more persistent bubble structure. It's the same technique used in traditional Champagne production.
Is it sweet?
Grand Reserve is medium-dry with no added sugar. The ripe fruit character gives an impression of richness, but the finish is clean and precise.
How should it be served?
Serve well chilled in a Champagne flute or white-wine glass. It's equally at home as an aperitif or alongside food.
